Offensively:

I run mostly a spread style college type offense. Lots of inside/outside zone, read option, bubble screens. Once they start biting on those, I take vertical shots.

Defensively: 4-3. Bent but don't break style. Let my edge rushers eat. Cover 4, Tampa 2, bit of cover 3, sometimes man coverage on 3rd or 4th down.

I got a bit bored this year, and have been trying to make a 3-4 zone blitzing scheme but I've been getting gashed with it. What about you guys?

On offense I usually run a pure spread offense. Only Shotgun plays with a lot of 11 or 10 personnel. My passing game is usually based off Bubble Screens, RPOs and intermediate concepts (e.g. Flood, Shallow, Mesh). My running game depends on the type of QB I have. If I have a pocket QB I usually use Inside Zone and some 01 Traps as my base runs. If I have a mobile QB my running game is based around Read Option and Read RPO plays.

On defense I base out of Nickel and Big Nickel Over G (so technically it would be classified as a 4-2-5). I usually don't blitz a lot on 1st and 2nd down, trying to get the opponent into 3rd & long situations by using different match coverages (Quarters/Palms, C3 Match, C6). Once I got the opponent in a clear passing situation (like 2nd & 15 or 3rd & 8) I usually bring the heat with some man blitzes.

Offense:

Stretch running game to set the tone early and then I work in some counters to catch the defense over pursuing. Gotta punish them on the ground.

Passing situations work in a lot of play action that sets up RPOs when the defense is sleeping.

Typically I use one concept to set up another later in the game and always use different formations throughout. I never get caught in a single formation outside of the 2 minute drill if I gotta march down the field. If that happens I just go spread and pitch and catch down the field.

Defense:

Heavy man to man cover with blitzing. I send at least 4 on every snap, mix in zone but any play I run has press in it as it throws timing off. Patient against the run. I rather give up a 3 yard gain than try and shoot and give up a huge run.

Who says there's no variety in Madden. I'm using Tampa Bay PB on both sides of the ball.

Offense is mostly Doubles and Y-Trips, both Gun and Singleback. The run game is centered around Dives and other Isos. Stretch is the change up. Stretch Alert X Lookie is great against Cover 3 spam, especially if you've got a Slant Specialist. Since I have 4 good WRs I also get to make use of Gun Spread which is very nice. If your opponent vacates the box in response you should be able to get yards with just the Inside Zone.

The passing attack is mostly about taking down field shots that develop quickly and making sure you have a reliable check down or two when you are getting quick pressure. If they can get pressure most snaps I must lean on the run game more because the short passing game isn't anything special. This is a Bruce Arians playbook, after all.

On defense I took Tampa because it has all the stuff I want (3-4 Odd, Nickel Normal, Big Nickel, Big Dime 2-3-6) and not much of the other stuff that I don't, so filtering through at the play call screen is much smoother. If I want a different front I either flip after the huddle breaks or create it with line shifts. The Nickel formations are very versatile and allow you to play Over, Under, or Odd. Having Odd at your disposal and then playing your 3 best run stuffers plus your best pass rusher is a great way to deal with guys who can run on you with 11 personnel.

I'm still mostly playing match zones but I have started to sprinkle in some M2M this year. Press is good which is fun, but extreme caution must be exercised against WRs with abilities. Streak or slant specialists can compel over-the-top and/or inside help. This limits your ability to provide help elsewhere. If you need help both ways everyone else must be 1-on-1 assuming you rush 4 and they send 5 out.
