I guess we're having some of Cincy's world famous Skyline chili tomorrow night for dinner!

Enjoy. Load it with cheese and onions if possible. Better if you can make cheese coneys with hot dogs or serve it over spaghetti. If you're expecting chili, though, you may be a bit dissapointed. It's more of a meat sauce. Very flavorful but not really a chili flavor.

By what you've just described, I'm looking at a meal 10x better than the umm, whatever it is I ate today. I'll remember the hotdogs part, though.
Shredded cheese is a rare commodity out here, though. It's doubtful I get any of that. When we do get it, it's gone fast, or it melts into huge clumps. Thanks for the suggestion!

It's actually quite good. To echo the above sentiments, don't expect chilli. It isn't really chilli, more of sweet meat sauce. I had some friends from Chicago come down. They tried it and absolutely hated it. They were thinking about real chilli, which again, this is not.

Come on now, why should I be worried? ![]() I'm in the Navy, I've probably, no I know I've eaten worse. ![]() I've seen general purpose cleaner in the cabbage, green bacon, rock solid and I do mean rock solid biscuits and sausages. That's just the tip of it, my friend. My favorite worst Navy experience? The chief that spit in my soda, and then I was told afterward. Yummy .

Actually, it's nothing real bad. Most around here don't know that Skyline is the largest local procurer of beef brains.

Seriously, Shorty. I know a guy who tried to buy some for his kid's class project. He called around to meat packers and one told him they sell all their brains to Skyline. Which, when I heard that makes sense. I've cooked with brains before in making mock turtle soup at a meat store I worked at in high school. It cooks down into that fine consistancy that you get in Skyline chili. It doesn't bother me, though. I ate plenty before I found out and never died.

I wonder if Skyline uses Beef brain what does Gold Star use. Or Empress for that matter.
Actually that reminds me, I wonder where an Empress Chilli is anymore. I saw them on the Food network not too long ago. There used to be one in Milford but I think that's long gone by now.

I went to the Dave Matthews concert yesterday at the American Airlines Center here in Dallas. While the opening act was on I got hungry, so I went to the concessions stand and got myself a chili cheese dog to eat. So I got to my seat and took a bite and realized that the meat in the chili had a really fine consistancy and immediately thought about beef brains. But I didn't really care. I scarfed that sucker down anyways...
