I kid you not.
This is mind blowingly good. and its also vegetarian if that matters Cover base of pan with olive oil (liberal amount) Chop 4 green peppers and add to pan Chop 2 onions (big) - add to pan Meanwhile 1 mug of boiled water - add - 2 Heaped tsp cumin " " " cayenne " " " white pepper 1 Level tsp garlic " " " corriander 2 veg stock cubes - stir together in mug and add to pan with other stuff Add tin of baby carrots to pan - simmer Meanwhile boil potatoes and half tsp cayenne in separate pot. When ready add potatoes and tin of tomatoes and tin of beans to main chilli pot. Leave to simmer Enjoy. |

I think the single most important thing in my chili is that after including all the obvious ingredients (not potatoes, by the way, I just can't imagine) I let it slow cook for at least 8 hours, preferably 16-24.
Don't use sweet onions. Simple yellow or white onions are fine. If you're going to use canned tomatoes as your base, use a combination of chopped/sliced/diced tomatoes and crushed tomatoes -- the latter will constitute the background for the chili, more reliably than the whole tomato pieces. If you're using beans (big division on this) try a variety -- I like to use 4-5 kinds, even when I'm making meated chili. I also prefer dark red kidneys to light red, your stores might have both. Black eyed peas, cannellini, and field peas are good additions, too. If you have the time and inclination, roast your hot peppers before adding them. Chili powder is fine, but chipotle is a very good complementray seasoning that gets overlooked for chili. Don't forget to use cumin. Coriander is okay, but not essential. I don't understand the concept of "too much garlic." If you're using meat -- try to do better than lousy old ground beef. Try some cubed steak, or sausage, or sirloin cuts -- it makes a nice difference. Chili is also a good place to try out exotic meats -- aligator, ostrich, whatever seems too weird to eat. Sink it into a long-simmering dish of cayenne seasoning, and it will taste like home. When you have all your ingredients together and heating up, and you're ready to start a slow cook -- add a bottle of beer. It will mostly boil off, but it adds a good complementary flavor, better than just adding water. (I use vegetable stock in my base, also, btw) I also like to add some unsual ingredients to mine, especially when I make it veggie style. Black olives, asparagus tips, and (especially) cut okra are all regulars in mine -- all work out well with the testure. If your chili gets too spicy to enjoy, there are two easy remedies -- add either a little cinnamon (Cincinnati style flavor) or just sugar. It calms the spiciness remarkably well. I love making chili. |

I never knew the wonders of Cinnamon/nutmeg style flavors in chilli until i came up here and tried Skyline chili. Now i don't want chili without adding a little bit of cinnamon.

Fantastic post Quik -- Chili is one of the few things I can and will cook, and I tend to think I do it well. I'll have to add some of your pointers into my repertoire -- as a college student for the last 5-6 years, I haven't had the budget to do more than ground beef, but we'll see what we can come up with now that I'm actually making some cash

Don't confuse Chili with a Chili Mac.
Put the spaghetti down on the plate first, top it with Chili, cheese, and onions. I also like to add a sauce VERY similar to Steak n Shakes. A combination of ketcup and worchishere sauce. Mmmmm.... Todd |
