Check out http://www.simhq.com for some good reviews.
For WWII, IL-2: 1946 is pretty much the pinnacle. The current 1946 release seems to have everything released in the series so far with the most up-to-date engine. For modern sims, Falcon 4: Allied Force is fantastic, and the "Wings Over {Insert Place Here}" series gets a lot of kudos. I have not kept up with Lock-On so not sure what the current feelings are towards it. For online play against hundreds of human players, try Aces High for $15/month. And for just tooling around the skies, there is Flight Simulator X.
