Editing Players.dat file
I am trying to change all references to my new league start date to 2008. I know I can easily do this with the editor that comes with the game. Is it also possible to tweak the "year drafted" and "joined team" information to also default to 2008, as though the league just started this year?

Yes, you can do all those things in the csv file.
