Is there any kind of general chart on Endurance to snaps?


I always assumed 0 Endurance to mean just low on the NFL scale and not that they're struggling to run back to back plays?

There is not, as far as I know. For FOF8, I had a roster file that I spent at least 40 hours on, with no random ratings that produced extremely accurate results.

My method for assigning endurance ratings went something like this:
1. obtain list of all players with games played and snaps played
2. Filter list by position and sort by most snaps per game to least
3. Assign the highest value (in FOF9 it would be 250, in FOF8 it was 9) to the player with the most SpG
4. Assign the lowest value to the player at the bottom of the list.
5. Let excel fill in the range of values in between the top and bottom player
6. Repeat for each position

A similar approach can be taken to determining other ratings.
