My star player (goalie) is out for three weeks.
I know that doctors can get injured players back quicker, but I know nothing about that system, really. If someone could explain to me how they work, that would be really helpful.

In theory, the more doctors you have on your club (up to 10, never more than 10) the faster your person is likely to heal. It's a nice theory, supported by the HT rules: "Doctor - Makes injured players get rehabilitated faster."
However, it's hard to say exactly what the "optimum number" is. 2 is better than 1, for example, but not twice as good. How quickly your player recovers is also related to how old they are (the younger, the faster). It may say 3 weeks now, but you could have a miraculous recovery and still play him next week (doubtful, but I had it happen to my team once).
I personally use 2 docs and 4 physios on my squad, though my squad is relatively young (average age is 21 and even that's thrown off by 2 outlying old guys).
If nothing else, get out your lucky rabbit's foot or make a ritual sacrifice to the HT gods or whatever luck-inducing strategy you prefer to use, since a lot of it is based on luck.

I don't know what the numbers are and it's probably kind of a tough one to test out but, to me, it comes down to how desperate you are to get him back. When my starting keeper went down, I needed him back BAD. So, I went for the motherlode (10) and hoped for the best. Because of that and his age, he was able to come back a fair bit quicker than expected. If you have a decent replacement and can wait, I'd say 2-4 can probably take care of your keeper well.
