im a defense trainer and will have a defender training slot opening up. after talking over PM training methods with MrKilla, he gave me a good idea for wingback training.
Anyway, my question is...what is the market for a player with outstanding+ defending and formdiable+ winger? Does anyone have any experience with this?

I have limited experience with it...I have a couple formidable & excellent defenders that receive winger training.
By and large, the market for them is limited. Most upper level teams that would pay out for the position use a defensive CD there instead. Better defensive ratings, very minimal reduction in wing attack from playing wings normal.
The up side is that it's cheap to buy wingers, so you can train this, and it'll help your team win more, but for resale, I wouldn't expect a great deal of luck with it. There will be a premium attached to the winger skill, but I doubt it would be as much as say, passing for defenders.

I feel niche players like that are generally more useful to the team training him than on the market. I learned that when I trained a guy to Supernatural PM/Outstanding Wing, and he got maybe 500k more than a normal supernatural would've.
I have a 25 year old magnif D/formidable wing that I bought in the offseason for a little less than $3.2M. He helps me out nicely as far as wing attacks go in a 3-5-2.
When I'll switch to defense training at the end of next season, I will buy a formidable+ winger and play him offensive to try to gain some offensive power on what would be an anemic 532 team :)
I will also purchase pretrained PM guys to help me stay competitive in the midfield (just like you seem to do).

Earlier today I saw an excellent winger with formidable defence go for 1.5m.
