So as we're doing Christmas shopping, we run into the question... does iTunes work with non-Apple mp3 players? i.e. is an iTunes gift card useless for someone with one of those?

The short answer is yes.
If you jump through some hoops you can make it work though.

k, thanks.
It's not really that hard for podcasts because they are already in MP3 format. I open my Nomad Explorer program. Click on the podcasts I want and drag them into my MP3 player. Then I delete them from my HD.
For music you download off Itunes I suppose you'd have to convert them to MP3 somehow before doing that, not sure if it's worth it.

I have a creative Jukebox and when I purchase an ITunes song or full album I always burn it to CD and then rip it my jukebox with the creative software.
yes, it is an extra step - I have paid for 99% of the 7000+ mp3's I own (with the 1% being stuff I have not been able to find to purchase) and I don't like the restrictions that ITunes puts on my mp3 files - I paid for these songs and they make it harder to use songs I paid for then songs I could illegally download. So I take the step to make them "pure" mp3 that I can manipulate as I choose.
