Outback Steakhouse night for the family tonight. Easily my favorite casual dining chain restaraunt.
I'll be having the following:
9 oz Victoria's Filet cooked medium-rare with a horseradish crown
House Salad with the Honey Mustard Dressing
Aussie Chips
Iced Tea, sweetened
Meat + Mouth = Pretty much the key to a happy life.

Medium rare is just slapping it on the grill for a half second on each side basically. Rare is essentially just bringing you the cow to the table and you take a butchers knife and carve out what you want.:D

Has this changed recently?
I used to order all my steaks medium and they would come a little pink and a little bloody. Now my medium steaks come completely cooked,no blood, and a little dry(No Blood steak sauce).
Do I need to rethink my medium steaks? A good steak does not need sauce because it is juicy from its own blood.

Outback is my favorite chain restaurant as well.
My standard meal is:
Aussie Cheese Fries
Bowl of clam chowda
9 oz Victoria's filet medium-rare
Steamed veggies
All the Coke I can drink
And cheesecake with raspberry topping if I'm not quite full.

Any chance you are one of those people that insist on using some kind of store bought sauce?
A properly prepared steak does not need any sauce. You want to taste the steak, not the sauce. If you insist putting on the sauce you might as well be eating a hamburger.

The difference is the taste.
Anything past the rare side of medium is usually about like going to McDonald's AFAIC. If you're going to cook out all the flavor, you might as well have ground the steak up & at least made a hamburger out of it.

No offense. I guess I understand that, but I have a hard time picturing the flavor, I suppose, because it looks absolutely disgusting to me to ever actually taste. I guess it's pretty hard to get "taste" across on the message board here, so I'll just drop it.

Used to get my steak medium well because I hated seeing any red at all. Now I can't stand it unless it's medium. Medium seems to be the right combination of tenderness and deadness. I couldn't do rare because it would be too tiring to keep an eye on my food and prevent it from escaping.

I was in a restaurant in Brussels once and a friend of mine ordered her steak "well-done." The waitress basically refused to place the order because ordering the steak well-done would ruin the meat and reduce an expensive, fine cut of beef to a tasteless, charred mass. The waitress suggested that my friend order the confit canard instead.
My friend went with the duck (an excellent choice by the way).

Lordy, what I wouldn't give to have such a thing happen.
Here, about 3/4ths of places try to insist on burning the thing into charcoal.
If they can't do it medium-rare (emphasis on the "rare"), I just tell them not to bother.

I rarely eat beef but when I order a steak, I get it medium rare. When I get a hamburger at a place where they actually ask how I want it, I order it medium well. The inside of a steak doesn't see air, but ground beef should be cooked at least medium well because every part of the meat was exposed at one time. Hell, when I worked at Sizzler even they wouldn't allow it to be cooked less then medium well.

Indeed. The inside of a steak isn't going to "spoiled" while the outside is fine. If the steak was left out to long, it's bad, whether it's cooked or not. Just like recooking meat more then two times

All beef has bacteria in it and needs to be cooked and maintain a minimum 140 degree temp for 15 seconds to remove bacteria.

Haha - you overestimate my concern for taking pot shots at you ;)...
Anyway, yeah, I agree with you after further explanation.
For me - I like what to me is "Medium" although that varies by restaurant and particularly with Outback it's "Medium Well" and you hope you get something resembling what you want... I find two things with Outback..
A) They undercook compared to the normal standard
B) The spectrums are SO wide... especially at Medium Well. You can order Medium Well and get pink all of the way through or no pink at all, whereas the other kinds are pretty consistant.
Anyway.. I like to see a medium-sized pink line through the meat. I don't like it pink all of the way through, but I don't like just a thin line of pink either. What this means is I'm getting steak less and less when I eat out and trusting my own cooking more. The "Pink all of the way through" or even rare is just a mental thing with me... I have a gag reflex and the taste bothers me. I used to be a "THIN pink line" guy, and I never really liked steak.. Once I tried stuff cooked a bit less I understood why people like steak so much.

Outback has a much rarer version of medium well, medium et al. When I've gone there, I order it medium and it comes out perfect.
But if you want a good chain steakhouse, Houston's cannot be beat

Last time I went to Outback, I greatly enjoyed the chopped salad with the blue cheese, almonds, and tangy vinaigrette dressing. I don't remember the name of it, but that was damn tasty.

How has it gotten to two pages with no one mentioning the bloomin' onion yet? What a delicious piece. Also, they have good bacon & cheese fries though you kind of get hosed after the first layer is gone and you have regular soggy fries.
I'm also 100% with everyone here on being a 'just the steak' kinda guy. No A1, no Worcestershire, thank you!
MrBug, I didn't know that different about steak/burgers. I order medium wherever I go, but might go with medium well on burgers now. But I don't wanna lose all the flavor!

The trick with the Cheese Fries, particularly like for two people, is to ask for a 1/2 order of Cheese Fries. You get less, yeah - but almost all of it is close to the "top layer".

I wouldn't say that it is exposure to air, but rather exposure to surfaces. The more surfaces anything is exposed to, the greater the chance of contamination with bacteria. When you ground up meat, there is a high chance of contamination.
That's why some people suggest if you want a really good hamburger, get a decent cut of steak, and grind it yourself. Then you can eat it medium rare if you want.

- The dipping sauce that comes with Outback cheese fries is the greatest sauce on the planet.
- Outback's pumpernickel bread that comes with your salad is the greatest bread you will ever eat in a chain restaurant.

I was going to say "ranch-like" originally, but left it out.
There is no way that's a pure ranch dressing. I love ranch, and have tried probably every one that you see in the average supermarket. There's something else fantastic in it. And if it is some company's definition of "ranch dressing," TELL ME WHICH AND WHERE I CAN GET IT! I will guzzle it...I don't care if I end up being 500 lbs, it's worth it.

My problem with getting a steak too rare is not the taste, it's the fact that I can't chew the damned thing (and, it seems to get cold very quickly). I'll get it a little more cooked (though I do like a fair bit of pink in there) just so I don't tire the hell out of my jaw.
Oh - and there's nothing wrong with salads. For us low carb folks, they're great, especially for places whose sides consist of potato, potato, corn, or potato.

My problem with getting a steak too rare is not the taste, it's the fact that I can't chew the damned thing (and, it seems to get cold very quickly). I'll get it a little more cooked (though I do like a fair bit of pink in there) just so I don't tire the hell out of my jaw.
I think the heat factor is part of it for me too. I'm pretty strict about wanting my hot foods hot and my cold foods cold.

The Victoria's filet is so tender that it practically melts in your mouth.

Outback has the best chain, non-reservation(they dont compete with Morton's or Ruth Chris') steak IMHO.
I will not eat a steak even medium rare given a choice, I honestly want the middle to be cool. At outback (where they do tend to be rarer than most) I ask for an extra rare steak. And the 14oz Strip is wheer its at.
The ground versus steak argument includes one small but unappetizing piece that is missing.
E. Coli- cow feces contaminated meat. A slab cut out of the middle of a cow is unlikely o touch fecal matter, where as ground bits from the entire animal has a much higher chance, plus the average pound of ground beef will include meat from no less than 5 animals. Ground sirloin is supposed to be cut then process ground and contain only 1 animal thus supposedly being "safer" to eat medium or medium rare.
The final disturbing hamburger knowledge is that USDA and FDA actually have a standard of how clean a facility must be before scraps can be "swept" up and processed. This is where MOST ecoli outbreaks start. Fecal matter is tracked to floor on shoes, then scraps dropped then swept into a pile (fecal and meat) then processed. Its not pretty to think about, but growing up on a beef farm and being in many slaughter houses I just accept it for what it is.
I mean who knows where your lettuce has been.:p

This would probably be my last meal if it ever came to that. And throw in a couple of lobster tails (which I think taste better than the lobster in most seafood restaurants). And give me some of those shrimp-kebabs while you're at it.

It is a Breed of cattle. Like a different breed of dog. Poodle, Lab, Irish Setter. I have no idea what you mean by segregated??
Angus cattle originated in Scotland in the northern counties of Aberdeen, Angus, Kincardine, and Forfar. The Angus is a polled breed with a smooth hair coat. It is a popular breed for meat production because of the marbling quality of the meat. Angus are tough cattle and can survive winter conditions in the Northern States as well as Canada. Many commercial breeders use the Angus as a cross to produce quality grade cattle.

Yeah, their croutons are really good, too. And their baked potatoes. I love steak, so when I go there, I get it every time, but really, it's by far the thing I look forward to least in the meal.

When I was a kid, my mom always cooked the meat well-done. I honestly didn't know there was any other way...One time as a teen (I don't recall the exact time), I had a steak medium rare. Now there is no way in hell I'm ever eating a steak cooked more than medium rare. Even medium sucks now. It'ds just dry and flavorless, and even A-1 can't save it for me.
Anyone in the bay area been to Forbes Mill in Los Gatos? AMAZING. I hear Alexander's in Cupertino is good as well.

I absolutely love the ALICE SPRINGS CHICKEN without mushrooms!!! I usually don't go for steak at Outback because I like the alice springs sooooo much. They have good steaks but I prefer the steaks at LongHorn Steakhouse... I usually get the filet and shrimp combo their which is enough for two meals.
My typical outback meal:
Aussie Cheese Fries (if the wife and I are not dieting)
House Salad with Ranch
The wonderful Pumpernickel bread
Alice Spings Chicken (no shrooms) - the honey mustard style dipping sauce is really good with this and I love to dip my aussie chips in it too!
You guys have me really hungry for some outback now.

Usually will take the cheesecake home.
As for steak.. usually medium rare. Then again, I enjoy cannibal sandwiches.. (very lean raw ground round on top of rye bread with onions and salt and pepper)

First thing first, Outback fookin' sucks. Of course, I might think that because I think any steak that isn't mesquite smoked is bland and tasteless. Mesquite smoked is the only way to go when it comes to a nice, thick, juicy steak. Actually, I just lied. Saltgrass and their garlic butter and spice rub is fairly decent...
Secondly, I've recently switched from a medium to a medium-rare guy. The more blood and juice the better. Anything over medium is too damn dry, and I REFUSE to use steak sauce.
Thirdly...I've forgotten what I was going to say next. Oh yeah, the best steak is the steak you grill yourself.

Eh, never actually had the steak there. I usually get the 6.99 (6.50? I forget. A few years ago it was $2 cheaper than it is now though) unlimited soup and salad deal. :D
Love the biscuits, unfortunately they are not on the diet.
edit: and I was *really* disappointed when they got rid of the wild mushroom soup. That stuff was the bomb.

Repeat with the ring finger which goes further down the bone that connects your thumb to the palm of your hand. That would be medium well. Finally your pinky at nearly your wrist and the skin is much more firm and that would be well done. That's what I learned in my culinary classes from the chefs

Yeah, touch method is the best, although at some point(sadly) you can look at a piece of meat and if you have a good enough mental timer you'll know if it's done(pretty close anyways). Geez I cooked for way too long.

I order the same, but I still tip well :D
My lunch rule is a min. tip of $3, regardless of melaa cost. If the server is actually competent (more often than not) I usually just leave a $5.

Yes, as I've said before (these conversations pop up every so often). But, I tip on it as if I was getting a more standard lunch. Rarely do I get more than one refill on either one though - I'll get maybe two salads and one soup, or vice versa (they used to bring a big bowl of the salad, which eliminated the need for refill, but no more). So it's not like that's a huge PIA I wouldn't think. Also, when I do the cheapy deal (like getting just the salad bar at Ruby's the other night) I will usually look to add on an appetizer.
