I'm pretty sure there's an option for this, but I don't remember where it is....
When I open up files in any microsoft office program, the "date modified" changes to the present time, even if I just open it, but don't save it. Is there a way I can turn that off?

I noticed that, but when you close the file, the date reverts to the original date, doesn't it? At least it does for me...

In my experience, the "date modified" is only changed while the file is open. If I close a file without saving it, the modified date reverts back to what it was.
