I have a LT that's in his 3rd year and he reached his potential of 60/60. Will he ever surpass his potential? Has anyone had a player reach their potential early, and go on to be a higher rating, ie: 60/60 to 74/74?

Yes, there are several case studies where the player who has reached max potential like your guy have gone up every season. It is entirely possible that he goes up another 15 points or not move at all. Best to look at the stats on his game, he might rate high but play bad or vica versa.

They can also down once they maxed out their experiences...at once. I had a DT who was probably 34/56 or so when drafted, by the end of his second season he was 45/45 and a decent backup. He started his 3rd season at either 45/45 or 46/46, then in week 3 he dropped to 25/25. Apparently he was always 25/25 but the mask comes off at once when they reach their max positional experience. It doesn't work the other way though.
It was funny because he was coming off a 2 sack game, can you imagine a scout thinking a guy is fairly solid, he gets 2 sacks, then all of a sudden they think he's completely worthless. Jim gets the Markus award on that one :)

Reaching potential in the 3rd year doesn't seem so out of line with how players develop in FOF2007. I think if you give your rookies playing time, they'll hit their ceiling in year two or early in year three. I've seen develped rookies (even non-RB) max out before the rookie season was over.
