How come they don't save? I change them, save the game but every time I boot back up, it's back to default.

Been reported in the bug report threads. You need to change them, create a new game, exit FOF, and then they seem to stick.

I'm already 5 weeks into my season, no doing that

Guess I'll have to change them each time I load the game.
