Does knowing that my QB's style is "roll-out" tell me anything that I can't see from his ratings and statistics?
The funny thing is that I was a roll-out QB -- yup, I ran the freshman B team -- and my coach rolled me out for one simple reason: I was short. I guess it cuts down the field, but it should buy time for the receivers to run longer routes. I remember throwing to the halfback a lot on five yard outs.

i think qb style determines the order he learns formations? not positive though

If that's true then roll-out QBs love them some 2-TE sets.

Dug back into my previous posts and found this example of how QB style affects formations known. Small sample size and from a previous version of the game, but it may still be applicable.
As for what formations different styles learn, I took 20 QB of each style (short, roll out, long) who had roughly the same number of total formations known and compared them.
The 20 short passers knew 229 formations (11.45 average), broken down as follows;
I Formation - 20
I WR to Slot - 20
Pro Formation - 20
Pro Two TE - 20
Strong Formation - 20
Single Back - 20
Goal Line - 20
Pro WR to Slot - 18
Strong Three WR - 14
Single Back Four WR - 8
Weak Three WR - 7
I Two TE - 5
Weak Formation - 5
Five WR - 5
Weak Two TE - 4
Single Back Two TE - 2
Strong Two TE - 1
The 20 roll out passers knew 230 formations (11.50 average) broken down as follows;
I Formation - 20
I Two TE - 20
Pro Formation - 20
Pro Two TE - 20
Strong Formation - 20
Single Back - 20
Single Back Trips - 20
Goal Line - 20
Strong Three WR - 14
Single Back Two TE - 12
I WR to Slot - 6
Pro WR to Slot - 6
Weak Formation - 6
Weak Three WR - 5
Five WR - 5
Strong Two TE - 4
Single Back Four WR - 3
The 20 long passers knew 228 formations (11.40 average) broken down as follows;
Pro Formation - 20
Pro Two TE - 20
Weak Formation - 20
Weak Two TE - 20
Single Back - 20
Single Back Trips - 20
Single Back Four WR - 20
Goal Line - 20
I Formation - 18
Five WR - 11
I WR to Slot - 8
I Two TE - 7
Weak Three WR - 7
Strong Two TE - 5
Single Back Two TE - 5
Pro WR to Slot - 3
Strong Two TE - 2
Strong Three WR - 2
These numbers were taken from a selection of young quarterbacks (4 or fewer years), when I later examined a set of 11 older roll out quarterbacks (10 or more years) the formation breakdown looked like this
I Formation - 11
I Two TE - 11
I WR to Slot - 11
Pro Formation - 11
Pro Two TE - 11
Strong Formation - 11
Single Back Trips - 11
Goal Line - 11
Strong Three WR - 10
Single Back Two TE - 10
Single Back - 9
Single Back Four WR - 9
Weak Formation - 7
Weak Two TE - 7
Weak Three WR - 7
Five WR - 7
Strong Two TE - 6
Pro WR to Slot - 5
Also broke down the original 20 roll out QB set in regards to player intelligence to see how it might affect the less common formations for that style.
Top 5
Pro WR to Slot - 3 (out of 6)
Weak - 3 (out of 6)
Weak Two TE - 2 (out of 6)
Weak Three WR - 1 (out of 5)
Strong Two TE - 1 (out of 5)
Single Back Four WR - 2 (out of 3)
Five WR - 2 (out of 5)
Bottom 5
Pro WR to Slot - 0 (out of 6)
Weak - 0 (out of 6)
Weak Two TE - 0 (out of 6)
Weak Three WR - 1 (out of 5)
Strong Two TE - 1 (out of 5)
Single Back Four WR - 0 (out of 3)
Five WR - 0 (out of 5)
