I'm having a hard time with this one.
Tiki Barber vs. PIT
Steven Jacskon @ ARZ
Derrick Blaylock @ DEN
Have to put one of them in. A Marshall Faulk scratch would make it a lot easier.
Blaylock is questionable, plus Larry Johnson has been outperforming him lately. If Jackson is going to play, I'd say he's the guy regardless of Faulk's status, as a half time Jackson looks better to me than any of the other options.

Jackson is still banged up (swelling on his knee). He will probably play, but I'd go with Tiki as a sure #1.

I would go with Griese because New Orleans has a much worst defense than Oakland.

Volek.

I'd take Volek if he starts. Defiintely not Palmer who is ruled out for the game.
Of the five you've listed, I would sit Tiki even though it's usually blasphemy to sit an RB for a WR. He's the only real offensive threat the Giants have and he's going against one of the best defenses in the league.

And since I'm not going to be around on Sunday, when I set 'em in a few minutes, I'm stuck with choices for better or worse

Hmm... I'd go with Pittman and Jones.
That's how I'm leaning too, it's also how Yahoo Matchup would rate them by stars (Jones & Pittman are 4-star, Westbrook is a 3-star).
