Anybody got a great recipe for Hot Wings?

For a good basic "buffalo wing" making a good basic sauce isnt too hard. Find yourself a good hot sauce, and add melted Butter to it in roughly a 4-1 sauce to butter ratio. I re-iterate, use melted butter, not margarine. From that point you can spice it up however you like to your taste. I like to add in a good bbq sauce with the wing sauce as it tends to make it spicy and flavorful at the same time.

Durkee's/Frank's Red Hot, vinegar, butter and garlic.
If you want them to taste authentic, you MUST fry them, and they should be served with blue cheese dressing (ranch is a sin) and celery sticks.

Ok, first things first, an even bigger sin than ranch over blue cheese, is Tabasco instead of Red Hot. If one uses anything but Frank's Red hot, you have disgraced the check wing!!!
As a Buffalo native, I know there are many ways to make wing sauce but this is how I make min.
You MUST deep fry your wings in a deep fat fryer (no baking!!!!). It is important to buy wings which are big, other wise they have a tendancy to get too crisp in the deep fat fryer. Even more, nobody likes small wings.
For the sauce I normally use about a 4:1 ratio of Frank's to butter and also a splash of vinegar. I place the mixture in the microwave (to heat the sauce and melt the butter). After heated for about 20-30 seconds I place the fryed wings in the container holding the sauce and I shake it up so the wings are smothered in sauce. Serve with carrots and celery and Marie's Bleu Cheese
Put them on the microwave, max power for 30 minutes, open it, grab one of the wings with your fingers, i can asure you it will be so damn hot!

I actually have found an alternative to frying that people really like when I make them this way. First off, Frank's has to be the choice for Hot Sauce, though Red Devil is not bad either. I have recently used Frank's Lime and Garlic version and it is awesome as well.
Anyway, what I like to do is blanch the Wings in the Oven until they are no more than half cooked (About 15 minutes at 350) Then soak them in a 4-1 mix of hot sauce butter, then finish them on the BBQ Grill, cooking them just until they start to brown, basting them with the leftover Sauce as they cook. Blanching them first seals in a lot of juices/flavor and also makes them melt in your mouth when they are done. (They tend to dry out a bit if you only grill them)
I was skeptical at first since I had tried totally baked Wings before and found them nasty, but after doing them like this we have not fried them since.

I don't own a deep frier, so I'm a heathen and have baked my wings ;). But I find the Frank's Ret Hot Wing Sauce is the best thing out there (and you don't even need to use butter for the Wing Sauce variety of their hot sauce). Tried Texas Pete's Wing Sauce the other night for the SuperBowl because someone at work told me it was good. But it wasn't as good as Frank's.

I used this recipe last night for my first batch of wings and they turned out great! Thanks DC.
Since I made about 4.5 pounds of wings, what do you think the best way to reheat them is: Oven or Microwave?

At BW3, pretty much any of the flavors is good. I prefer their mild, medium, hot, and fire over anything Hooters has to offer. That said, I go with the Jerk as well.

This is borderline heresy. They must be fried, tossed in a sufficiently vinegary sauce, and then baked.

Couldn't agree more, although we have a place called Brewsky's that has maybe the best sauce I've ever tasted. It's hot a sweet at the same time, yummy stuff!!

Oven or Microwave: I reheat everything in the micro, so my answer is obviously biased.

Hot wings should be consumed when cooked the first time. I mean, who re-heats chicken wings? :)
I bet you re-heat pizza in the microwave also. :)

The best thing about leftover pizza is eating it for breakfast when it's cold. Yumm.

For reheating, microwave. For first time consumption, if not fried, use the oven.
For pizza, you gotta reheat in the oven.

I can't stand blue cheese anything, so fuck that - it's ranch all the way. Of course, only sissies need the dipping sauce to cool off their mouths...

If it's thin crust, I reheat pizza in a skillet on the stove top. Keeps the crust nice and crispy!

What if the dipping sauce is more hot sauce?
Sometimes necessary if the hot sauce on the wings isn't strong enough.
