View Full Version : How should we cook Chicken for dinner tonight?

I took out boneless/skinless chicken breasts for dinner tonight, but I can't figure out how to cook them...please help! Here are the choices:

Salsa Chicken...chicken topped with salsa and mexicorn wrapped in a foil pouch and baked.

Grilled Chicken...marinated and thrown on the grill

Cheese It Chicken...chicken coated in ground cheese it crackers and fried, then baked

Ricotta, Garlic and Spinach stuffed Chicken Breasts. I made that on saturday, and it was awesome.

Yeah, it's really good.

Original cheese it crackers, put them in a food processor to make crumbs (I tried it once with just pounding the crackers and it didn't work as well - the breading fell off). Dip a boneless/skinless chicken in eggwash, then coat with the crumbs (I always do this step twice to make it breading hold better and not fall apart) and put in hot oil for about 3-5 minutes on each side, the breading will turn "golden". Remove and place on a cookie sheet and bake in a 350 oven for about 15-20 minutes or until the juices run clear.

Let me know how it turns out if you try it!

Marinate the suckers in Italian dressing, then grill.

I voted Salsa Chicken, though whenever I don't know what to do with chicken, I tend to lean on Campbell's soup. Last Thursday I wasn't sure what I wanted to do with it, so I went to the Campbell's soup site and got a recipe for Fiesta Chicken and Rice (or something like that). It ended up being a can of cream of chicken soup (I use the reduced salt version), rice, salsa, corn, and chicken...and turned out quite tasty!

Salsa chicken is one of my favorite dishes, I could easily eat that 3 nights a week, and cheeze-it chicken is suprisingly good. I was worried about it when I found out what it was, but it really is quite tasty.

I got that recipe from the reynolds wrap website...they have a whole section of recipes made in foil packets...just fold them up, throw them in the oven and POOF - yummy meal in like 30 minutes! God bless the internet!!!! :)

I've used cornflakes coarsely grounded with salt, pepper, and different spices as a replacement; but cheez it sounds delicious!!
