Has anyone found success using this ? Maybe putting him as the RB in single back formations, or just as the starting RB ?
ala .. Pete Johnson, William Andrews, Larry Csonka, Mike Alstott, etc.
Anyone seen the AI do it in solo ?

I did it with reasonable success in 2k4, but haven't tried in 2k7 yet.

It really depends on a couple of things. Keep in mind that all players have some level of skill that is hidden based on their position in the roster file (i.e. offensive lineman do have pass accuracy skills).
My best suggestion would be to look in the upcoming draft and see if any full backs have unusally high 40-yard dash numbers (i.e. in the high 4.40's/low 4.50's). 40-yard dash has an above-average correlation with high breakaway running skills; although I admittedly have not yet seen a fullback with extraordinarily high 40-yard dash totals yet in FOF2k7.

I just put my FB(William Andrews) in the starting RB slot and it has worked fine.
What about the converse? If I play a dual running back system with a 2nd RB in the FB position? I imagine that I'd get less blocking usefulness out of him, but it would balance out my playcalling and stamina requirements a little bit.

Almost right. At least in 2004 (not sure about 2007), passing skills were only for quarterbacks, but all other positions had all other ratings (breakaway speed for QBs and FBs, in one useful example).

I've never tried this, but in a few of the dynasty's that I've read, it seems to work well

I started a FB at RB for about 6-7 games once and got decent results. He only had 15 or so carries each game, but I was happy.
I haven't played the historical files yet, but I couldn't imagine NOT doing this when managing the Raiders of the 1970's where Hubbard, van Eeghen, and Banaszak dominated the teams' running game.
