Anyone have any good suggestions for a joystick and throttle?

Also, no smart or dumb ass comments about throttling your own joystick either...

There are really two choices right now with Thrustmaster and the Cougar line seeming to die:

CH Products: I've got the Pro Throttle and Fighter stick and are happy with both. They also sell a decent set of rudder pedals and other nick-nacks.

Saitek X52: Cheaper and finally considered pretty good. SimHQ has a recent review of them.

The biggest differences are that the CH cost a bit more, while the Saitek tends to have more software issues. But there are people that swear by each set, so I don't think you can go wrong either way.
