I'm looking to take an existing wav or mp3 track and adjust the volume downwards on just the piano. I have a new CD where the piano track is really annoying but everything else is great. What do you recommend?

Is a file a single wav/mp3 or is it a multitrack? If it is a single file you won't be able to get the piano down with any sort of accuracy.

I use Adobe Audition for wav file work and I think you can get a 30day trial of 2.0. If you need any help using Audition let me know.

What JPhillips said. You can't strip out the piano effectively with a *.wav or *.mp3 because the range in which the sound is made would effect other instruments as well. If the song is a .mid or *.midi file, you can definitely take out the appropriate software because each instrment would actually have their own track.
