I'm interested in starting a private wiki for an organization I'm a part of, but I'm not sure where to start. I need a site that's private and, if possible, free.
Also, we do have servers, but the tech people are sort of difficult to deal with. Are there sites that will host the wiki for us?
Any help would be appreciated.

Here is free, and possibly private. I'd suggest you have your tech people do one on their servers for it to really be private, but this is as close as you'll get if you want a free one that is hosted with someone else.

Thanks for all the help. Unless there are any great options, I'll probably battle with our IT people and set up an actual site on our servers.

It sounds like it may be more than what you're looking for, but the little startup I'm working for has recently started using Assembla, a 'development workspace' which includes issue tracking, a wiki, SVN integration and i think a bunch of other stuff that we don't use. The wiki there is pretty easy to adjust to and has proven helpful in getting information publicly and easily available.
