It swaps the symbols every time so that all of the mathematical combinations are covered.

No, but good try.

Think about it, you are never giving your number away, so how is it going to know? if you look at the chart, what if your number was one below it? It is a different symbol, yet still brings up the number you had in your head.

you are always going to end up with a multiple of 9, so 81, 72, 63, 54, etc. all have the same symbol. it switches that symbol every time, but if you do it a few times, you will notice that these all have the same symbol.

clever, but not magic.

99-18=81
98-17=81
97-16=81
...
89-17=72
88-16=72
87-15=72
...
79-16=63
78-15=63
77-14=63

and the list goes on.

Yep, the only possible answers are 9,18,27,36,45,54,63,72,81 and they all have the same symbols

To add to that, every two-digit number in our number system is written as a group of tens and a group of ones.

49 = 4 x 10 + 9
55 = 5 x 10 + 5
yz = y x 10 + z

So if you subtract the sum of the two numbers you would get...

49 = 4 x 10 + 9 - (10 + 9) = 4 x 10 + 9 - 10 - 9 = 4 x 9
55 = 5 x 10 + 5 - (10 + 5) = 5 x 10 - 10 - 5 = 5 x 9
yz = y x 10 + z - (y + z) = y x 10 + z - y - z = 9 x y

So the answer will always be one of the multiples of 9 under 100. (Then look at where all of the yin yang symbols are.)

I bet this post interested nobody. My explanations of math tricks never seem to amaze my students as much as the tricks.

EDIT: It looks like it isn't always yin yang symbols. But the symbols for multiples of 9 are always the same.

That's very clever. I actually figured out the math by myself. But changing the symbols had me fooled. Did the quantitative, but failed on the qualitative. :)
