Okay gang, let's have at it.
I intend to be a superpower team (thinking Barca or AC Milan) so that I have tons of players who are multi-talented so that I can experiment with them doing all sorts of different things

A few things that have worked so far:
Most of the default tactics have the centerbacks with full defensive on the mentality bar, and the fullbacks not much more attacking. I have the centerbacks a few ticks under normal and the fullbacks on normal, and making forward runs. This has reduced the gap between midfield and attack and also led to my team catching the opposition offsides more often.
As for attacking if you have the better players I find that it pays to be really aggressive, attacking with eight and leaving only the centerbacks covering behind.
Near post flick-ons still seem to be an effective way of scoring from corners.

If you have fast defenders, run the offside trap more often unless you are facing a team with a real speedster. At the top levels, scouting and knowing your opponent becomes much more necessary.
If you do that, you can make the field "shorter". But if you make the field shorter you have to have players who can beat defenders one on one, especially on the wings. Creativity can also play an important factor in this. I think wingers are the most important position on the field.
