Since football season has started I have tried two or three times to start a sp franchise, but it is not holding my interest. I have tried one coaching all the plays, one trying to just be gm. Anyone else have any ideas to try to do this fresh and draw me in?

yes sir. Have you tried a multi player league. Single player is fun for trying out game plans you plan to use in a mp league, but that's about it. I suggest you get involved in one, as it the only way to truly enjoy this game. Beating the computer gets boring, but beating another human opponent is very satisfying. It is easier than you think to set it up and upload your exports.

Yeah, multiplayer's about it if you're burned out on sp, house rules aren't much of a stopgap. Allow me to plug our league as well:

You can use house rules to make the game more challenging or set specific limits to what you can do as a GM.
1) Release all players from the team and start over, this is also called "empty cupboard" challenge.
2) Trade all your draft picks for future picks (ie don't make any picks), do not sign free agents other than undrafted free agents, this is also called the "Island of misfit toys".
3) See how many super bowls you can win in a row, or see if you can get a "100" perfect GM score at the end of a season.
4) Have the game sign you a scout and a coach (ie don't pick them yourself)
I am sure there are more...
Specific Limits
1) Have a cheap owner that demands you leave 40% cap room open (The Bengals rule)
2) Make a profit every season, get "fired" if you do not make a profit in two straight years. (Jerry Jones rule)
3) Move to a new team every five seasons (Bill Parcells rule)
That should give you a few ideas, but the previous poster are correct multi-player is the next level.

About a year ago i got bored with the SP also and joined into the addiction of multi-player. It is worth it and changes the whole outlook of the game.
I am in multiple leagues and will plug a few of the ones i would tell you to join if you want some great interaction.
Alternate Universe Football League :: Home (http://aufl.simsportleagues.com/) I think there are two availble teams and the owners in this league are some of the best i have ever been with in MP. Helpful and informative.

GEFL - Powered by vBulletin (http://www.goldenerafootball.com/forums/index.php) has a terrific database of statistics and is just starting on through the 90s as we speak. Not as much information and help here but long term owners that do hammer on each other pretty hard
Replicated NFL - A Front Office Football Multiplayer League (http://www.replicatednfl.com/) Has owners that help you learn more about the game and a few owners that have built gameplans that are years above mot of my other leagues. This one you will need to get more in depth into FOF but well worth it
vNFL Historical House League (http://www.bearsruletheworld.com/vnflhist/index.html) and there is alost the house league. vNFL - The virtual National Football League (http://www.bearsruletheworld.com/vnfl/) both are on the same forum but the competition is great having owners that are commish' in the other leagues. This league is more of a relaxed few sims a week great way to begin a league. The history just did a draft from 1999 so the last ten great years can be relived there.
my 5 cents but well worth it to join one of the MP leagues.

Cool, I will check out your MP sites that you have posted and I will pick one. In the mean time, I will also try some of those house rules.

I've tried acting as purely a defensive coordinator, controlling only the defense for one season to avoid all the other aspects of the game. One and done style. I'll study some of the logs for the team I'm playing that week and come up with a game plan based on that.
Sometimes, I'll call the plays, but only for the defense -- again based on my study of the offense.
I've yet to try as just an OC, but that may be something else to try.
Something different.
