Is there some sort of new player guide available somewhere? What do you guys look for after a game to think about adjusting depth charts, rosters, which players to draft.

There is only a single guide on steam so far, which is very nice but not going into much detail as most is done using recommendation and AI decisions :)

I am aware this question is far too broad to be answered fully but just a place where I should start to look would help me as I have not really found much information in this forum so far:(

1 question in particular: I have got an unhappy player who played 10/10 games oO? How shall I give him more playtime?

I'm in the process of writing a "how to move from 'beginner' to 'intermediate' in FOF7" guide. Should be done by this weekend.

On your specific question, most of the Disgruntled/Unhappy/Angry/Livid/Demanding Trade stuff shows up because of not *starting*. I've noticed that players get displeased with playing time for the following reasons:

They perceive that they are better than the player who is starting at their position. (Ex: You've got a guy who is 45/45 not starting and a guy who is 40/40 starting. Mr. 45/45 is likely to get pissed off.)
They are a true starting-quality player, and not starting because you've got too many studs at the same position. (Ex: You have three offensive guards rated 65/65, 70/70, and 75/75. You start the 70 and 75 guys. The 65 guys gets angry and wants to be traded. He knows he's a Pro Bowl player and should not be sitting the bench.)
The are the "best option" at their position but you are playing someone out of position over them. (Ex: I've had the above situation happen where I had three VG offensive guards, one of whom had full positional experience at RT, so I started him there and a 55/55ish OT at LT. My 2nd-best OT, who was around 41/41, became angry at not starting.)Odds are that the guy needs to start.

If a player is Angry, Livid, or Demanding Trade, he will not sign a new contract with you.

I moved a rookie QB in to the starting role in week 6 of a league and the starting vet QB is now disgruntled. I believe it was immediate...but cant confirm.

The "angry" thing gets annoying when a guy is your starting WILB(or WLB in 4/3) and he only starts half of the games due to you being in nickel.

Heh, I just noticed in one league, I've got a bunch of LBs but it so happens that almost all of them are MLBs. Only two OLBs on the roster, in a 4-3, and they aren't the best ones.

So, one of the two is 14/14 and he's livid for not getting playing time. The other actually starts in the base, but not in the nickel or dime. And he's managed to not start a single game this year. Still livid!
