Toppings for nachos?
 
I'm making nachos for the Final Four, but I can't think of any exciting toppings except for cheese, meat, and jalapenos.

Any interesting (or non) ideas?

I hear bacon is the trend these days....

Since all the losing teams in the Final Four will be wearing blue, maybe something green like peppers to show allegiance to the winning team.

meat, black beans and corn mixed and thrown on top of the chips, followed by cheese, salsa, sour cream, then green onions.

I am mostly being a smart ass. I once was a northerner myself and called anything with tortilla chips, cheese, and other toppings "nachos." On the border here though nachos are strictly chips with cheese and jalapenos if you want them. If it has more then that on it then it is called a Botana Platter, or Sombrero Platter, they have different things. A botana is chips with refried beans, beef fajita (flank steak) and/or chicken fajita, cheese, onion, green pepper, a little tomato, usually a quesadilla per person laying on top, and on the side guacamole, lettuce, uncooked chopped onion, whole jalapenos and pico de gallo. It's pure goodness, and now I want a platter for dinner.

We did actually, but we got them at the movie theater. They weren't the typical nachos with a bunch of tortilla chips though. They were like 2 deep fried corn tortillas cut into 4 pieces each and topped with refried beans, meat and cheese with a side order of sour cream 2 different kinds of salsa and guacamole. Pretty damn tasty.

This inspires me for Monday. My wife couldn't care less about the games, but is griping about the lack of snacks in the house (she is 7 months pregnant). I'm making some nachos so she'll at least stay up with me Monday night, even if I have to remind her which team is which. :)
