well maybe you are too demanding.
Without even sleeping in a hotel, you should be able to work 11 hours before completely running out of juice. Look at this:

Your character gets 3 energy points back per hour, no matter that he's working or doing nothing. Unless you go to sleep in a hotel (and thus pay $10), there's no other way to regain energy faster. Stamina is only used in the jobs that need it and does nothing to your energy for working longer or more hours in a day.
