I tend to trend down throughout the week, then head up over the weekend. My wife will make a breakfast at least one day on the weekend and our dinners are not as minimalist as they tend to be during the week. Throw in a bit more alcohol and my Monday weight is a couple of pounds higher than my Friday weight.
So if I was picking a weekly weigh-in, I would gravitate to the same day you are suggesting ... Friday morning is the best time to feel good about your weight.
