I definitely recommend waiting to start the show. Some plotlines are condensed in the show, and so seeing what is coming really pulls the rug out of a lot of the fun of the books. I would read the first three books, as they combine to be a really masterful ride, then start watching the show. I think you'll enjoy both much more that way.
