Yeah, Minecraft can drag if you don't have some sort of building goal in mind. Or just an affinity for minless digging.
But if you
do have some sort of goal - a town, an elaborate castle, a giant monument, a system of tunnels, terraforming (leveling) large tracts of land, building successive levels of platforms in the nether :whistles:, you can be occupied for hours, days, etc. It's what you choose to make of it, really.
