All of that totally makes sense, and I find even the basic portioning aspect appealing. Like you say even choosing a weekly menu is a significant 'hidden' hassle, and then trying to properly shop, cook & store it IN PROPER PROPORTIONS becomes some kind of mental Tetris, regardless of whether you're talking about one person or ten.
