The same things that drive the all-time greats as competitors force them to hold on long after their expirations dates. I remember reading something from Steve Carlton about the end of his career. After the Phillies let him go, he putzed around with the Twins, White Sox and Giants (at least, maybe one or two more teams) sucking with each one and getting released. He said he did it because he had to get the drive to compete completely out of his system, even if it meant basically throwing BP as a shell of his HoF self.
