You remember correctly. It was never out right displayed, mainly because there were no Stannis or Melisandre chapters, so unless, say, Davos actually saw them in the act, there was no way to ever know. Still, based on that implication and the birthing of the shadow baby in the book, I always assumed that their union was a necessary element for the spell. The show just showed that out right, because, you know, it's sex.
