I remember from the books that it was implied that Stannis and Melisansdre were 'enjoying' each others' company, but I don't think that it was out right displayed like it was in the episode last week.

My question is, was it always implied in the books that Melisandre used Stannis' sperm to create the demon baby/shadow monster that kills Renly? I don't remember that from my reading, but that is the impression that I got from the show.

You remember correctly. It was never out right displayed, mainly because there were no Stannis or Melisandre chapters, so unless, say, Davos actually saw them in the act, there was no way to ever know. Still, based on that implication and the birthing of the shadow baby in the book, I always assumed that their union was a necessary element for the spell. The show just showed that out right, because, you know, it's sex.
