If Barkeep chooses to rest some nights to avoid appearing tired, then it becomes a crapshoot for the Cowboys on what night to try to kill Barkeep. This is all under the assumption that Barkeep is not Cowboy.

This is only a problem IF we assume that night actions can be tied to specific roles. For now, I see no basis whatsoever for this assumption.
