The use of the word "interesting" here, without followup as to what "interesting" means and what's so interesting about it, follows a fairly typical scum wording pattern.
It's also pointing out something that isn't a thing, because Jackal's vote was the only ambiguously early vote in regards to how seriously it was meant to be taken.

Saying "she amuses me" cranks down the heat, if anything. It seems more like an attempt to discredit me and get me to back off than a legitimate expression of suspicion regarding my interactions with Jackal and Vaimes.
