The eggs are not fossilized. There are real hatchling dragons inside, and they will soon hatch.

And actually, one of the things I am most looking forward to is seeing how the show producers handle the visual representation of the dragons, how they handle the effects. That's movie effects type stuff (which is costly) in an episodic show.
