This will be our first time out to WDW, so feel free to throw out ideas for us! We're annual passholders at California Disneyland, so I'm wondering if WDW Magic Kingdom will just me more of the same...?

Magic Kingdom there is different than in California. It has almost as many rides as the other three parks combined.

Pick a day with extended hours to hit the Magic Kingdom so you have time to hit everything. I'd suggest two parks in one day to make sure you fit in everything in your three days. Hollywood and Animal Kingdom can both easily be done in a half day and are close to each other. Just combined those two into one day. Epcot can be a full day.
