Pick a day with extended hours to hit the Magic Kingdom so you have time to hit everything. I'd suggest two parks in one day to make sure you fit in everything in your three days. Hollywood and Animal Kingdom can both easily be done in a half day and are close to each other. Just combined those two into one day. Epcot can be a full day.

Yep, and Epcot will have the Flower and Garden festival going on, so you'll have a lot more food choices as well.
