Food choice-wise, quick service meals are perfectly fine since our daughter is more than happy to get by on corn dogs and chicken fingers, but I feel a little like she's still at the age where meeting some of the characters again might be still be cool for her.

Do you guys do full meals, or just quick service?

Also, 6 year old in a stroller, yes or no? I'll feel like a douche, but after 10 minutes at six flags, our daughter is already complaining about walking.

There's some hybrid options that are less time but still get a sit down feel. We always hit the princess lunch in Norway. It's easy to get reservations there and fun to try some of the different foods (while still having 'kid' options available). It shouldn't take more than 60-75 minutes.

Also, we're big fans of the Biergarten. No characters there, but it's a buffet so you can get in and out quick and they have tons of interaction between the Bavarian band and the kids.

I'd agree that you don't need one every day. Maybe just the first and last days.

Strollers are a must. We just got back from WDW. I have an 8 year old and 5 year old. I have a tandem stroller we've had for several years. I keep that stroller solely for WDW trips. You're going to walk between five and eight miles every day. A kid can't do that, even at my older daughter's age. Strollers are a great way to give them a break when they need it. No shame in doing that. If you don't bring one, you're going to end up spending a lot of money on stroller rental when you realize you've made a mistake.
