Well, OK, but I have a hard time believing that places like Trotter's and French Laundry have maximizing throughput as their #1 priority.

I'm not sure the two aren't related. The servers and cooks aren't necessarily bad or uncaring, but they can't possibly give much of any personal attention to one table without losing all of the others. This could be a matter of not having enough people working there, but I think it is a conscious business decision to push the throughput levels high enough to cause what they consider an acceptable loss in service.

Applebee's is decent for post-work drinking thanks to their specials, but aside from that I'm not much of a fan.

My wife likes the Weight Watches menu they have, though.

There's gotta be certain finesse to it though. No one likes to be rushed through a meal. Some places do it better than others.

And I love Applebees. But I have absolutely no taste in good food, it's all good to me. Which helps in the wallet.
