A great snack for Atkins:

Take a box of sugar-free, fat-free Jello pudding mix (I like the Chocolate Royale and the Butterscotch). Pour in a half gallon of heavy whipping cream. Whip it until the cream begins to "peak". At that point, you should have a large bowl of mousse-like stuff that tastes great. The entire bowl is 32g, which works out to be around 2-3 carbs for a couple of ice cream sized scoops. It is, in a word, excellent.

Oh...and I'm in my sixth week and have lost 22.5 pounds.
