I wonder if the "thick cut" bacon is for a reason like it helps hold it together...or if it's just cause, you know, it's more bacon than regular cut bacon.

Looks good in theory, but I don't know, that's an awful lot of fatty meat. I love meat, but I'm not sure I would enjoy this.

Toss some wood chips on your grill and I imagine you would be good to go. Personally, I would go with mesquite over hickory...

Looks good. I wonder how easy it would be to lean it out some.. maybe use venison sausage and instead of the extra bacon, maybe onion/pepper mix or something.

Granted, still would love to try this as is.

To elaborate, this was real good. I don't care for Italian sausage so we used a mild pork sausage. I forgot to put the cheese in as well. The cooking went OK considering I don't have a proper smoker. We made some can buttermilk biscuits, sliced the "loaf" and served it on the biscuits sprinkled with sharp cheddar cheese. This thing is great. The outside bacon gets all smoky and crispy just on the edges, and the sausage cooks up solid, with the bbq sauce and bacon layer inside breaking it up some. Just YUM.
