Grilled Burger Recipes
Alright,
anyone have any special recipes for grilled burgers? I am trying to step away from my standard recipe and get something new... the wife won't let me do the Sunday ritual of Pizza, Wings and Beer so I am getting away with Grilled Burgers, Wings and Beer.

Ground beef + onion soup mix is very simple way to make some nice tasty burgers.

Yup this past week was a brutal work schedule.... Tues - Chicago O'Hell Wed - North Dakota / Minnesota Thurs - Minnesota Fri - Minnesota / Wisconsin Sat - Wisconsin (Drove back to Minneapolis) Sun - Flying Home Each day ended with 4 to 5 hour drives...

Mostly, it's about the toppings, but in the patties themselves:
Use 80/20 ground beef - you need the fat content. Alternately, use 85/15, and add 2 tbsp bacon grease per 1 1/2 pounds of meat. Per 1 1/2 pounds, add in a couple of tablespoons of milk and a chopped up slice of hearty white bread to act as a binder. Crust removed, and the slices should be a little larger than coarse crumbs. Keep any other flavoring in the mix to no more than a teaspoon or two total. Any more than that and the burger loses the flavor of beef. For bold flavors, save that for the topping. Right now my favorite topping is actually a pan sauce - butter, brown mustard, and red wine reduced in the pan the bacon fried in. |

I usually don't stray too far from the onion soup mix but when I do I like to add in a little ground sausage just to change it up once in a while.

add cheese. That's my favorite burger recipe. In fact, won't do anything else.
Also, don't melt it on, add it when you put it on the bun and it melts as you are eating it. A+ |

I've done the following with good results:
1. Onion Soup Burgers 2. Salsa Burgers (with sour cream and cheese) 3. Blue Cheese & Bacon (put into the middle) Those are my mainstays other than simple BBQ sauce or McCormick's Montreal Steak seasoning. |

I use ground turkey instead of beef. I add in a few dashes of Worcestershire sauce, some Parmesan cheese and seasoned bread crumbs. Chopped onion and bell pepper. Black pepper and a touch of garlic powder.
Muenster cheese is the topper. Put it on a french roll and you have a Jimmy Buffett song in the making. |

I add worchestershire, mozzerella cheese, shredded cheddar and crumbled bacon..... it will smoke up a grill, clog an artery and fill a belly

Worcestershire sauce and chopped up onion. I *really* like the flavor the Worcestershire sauce adds to the meat when it soaks in a bit while I'm making the patties.

We went with the standard fare of a little bit of Montreal Steak Seasoning, Onion Soup Mix and Bread Crumbs...but we added Fire Roasted Green Chile's and a touch of Cayenne.
We made a hot sauce / BBQ Sauce for our topping and it was just an amazing flavor all around...I have some extra's I can't wait to eat today.

Dennis, I know living in Utah you have to made a few Garlic infused Burgers. The Busy Bee on 17th and State in Salt Lake was a dive but had the best Garlic Burgers.

If you're looking for something with a lot of flavors try Bobby Flay's Cheyenne burger. You can find the recipe on the Food Network site. The burger is basically a bacon cheeseburger with an ancho chile BBQ sauce. I made a couple of adjustments to the sauce recipe -- I added another 1/4 cup of ketchup for 1 1/4 cups total, and reduced the dijon mustard to 1 heaping teaspoon instead of 1 heaping tablespoon.
Also, try to use smoked cheddar as recommended. The smokiness of the cheese combined with the sweet/spicy sauce makes for unforgettable layered flavors. I use two slices per burger but the next time I make this recipe I might reduce to only one as the smokiness tends to be a bit dominant. And definitely make the onion rings -- they go right on the burger and also on the side. They are excellent as well. BTW -- I used 80/20 ground chuck not turkey. And I put some of the sauce on the burgers toward the end of the grilling time. I don't think that is in the Food Network recipe. Last edited by weegeebored : 06-07-2009 at 12:01 PM.
