cuervo's Taco Noodle Bake
12oz package egg noodles (with yolk, bc wtf they're EGG noodles)
1 can diced tomatoes (green pepper, celery, onion variety is good here) 1 can black beans, drained and rinsed 1 8oz package shredded "Mexican" cheese 1 packet taco seasoning 1 cup sour cream 2 heaping tablespoons mayo Combine tomatoes, black beans, taco seasoning, sour cream, mayo, and 3/4 of the cheese in a large bowl. Allow to sit. Cook egg noodles as directed (either medium or al dente - and ffs, salt the water). Drain noodles, then fold them in with the contents of the bowl until mixture is uniform. Transfer contents of bowl to a 9x13 baking dish and top with remaining cheese. Bake at 350 for 25 minutes. (Or 325 for 30, or whatever. This isn't fine cuisine.) Enjoy.

If I had a fresh batch, I would. Maybe next time, though I did just make some last week so I'm not sure when it'll next be up in the meal rotation. Quote:
I don't see why not, as long as it was cooked before going into the mix. I opted for black beans over meat because my daughter has had a couple of vegetarian (or more accurately, carbotarian) stints but I'd think meat would fit right in. Hey, we had Chipotle tonight too!
