With only one option, I go for a can of black beans. A plain potato with salt is not gonna do it. A saltless potato with sour cream wont work. A can of black beans has enough flavor to make it work.

That is, assuming a can of black beans is considered "one topping".

Guacamole would also be an excellent option.

Chili is like 8 different toppings. Feel like it should not qualify. If I said I'd like to top my potato with beans, peppers, tomatoes, ground beef, peppers, onions, etc I'd get laughed out of the thread.
