To send directly through Steam it has to be in your inventory but not your library (one you bought as a gift but haven't added to your personal library). Once you have added it (not even played it) to your personal library you can't send it on Steam (unless something has changed).

I do the Humble Bundle monthly package. For those I just get the code from them and send it.

DOH, missed this and yes, once you install and play them you can't gift them any longer, they are yours.

Yep Fable comes to mind, Stardew Valley too and has MMO feel to it with combat and daily quests. Maybe a little Animal Crossing charm? Looking forward to trying it out.
