Just took the big one off at 165.

Carter: "I want to taste that. What is it, Daddy?"
Daddy: "Pork."

Seriously, this is absolutely fantastic. Significantly better than anything I've ever done before.

Yeah, I'm very pleased with everything with this sucker. This was my first serious attempt at pulled pork, actually. I usually just take it off at 165ish.

Heh. I just started a smoking session and used my last apple wood. Headed to Amazon to check on the pricing for chunks (not chips,) but noticed that the price for this bag of chips has come all the way down to $4.19 now. Pretty sure it's still in the $4.49-$4.99 range retail. (I'll double-check that at some point soon, I'm sure. )

Bah. They're not eligible for Prime, so the price rockets up to over $10 per bag with shipping. Guess I'll stick with retail for now.

I've grown to trust the Weber smoker very much, it appears. We're having a group of around 20 over this evening, but I'm playing at the first two services this morning, which means I will be gone from 7:30am-1:00ish pm. Fired 'er up at 5:00am, and it was up to 225 by 5:15. Played with the air control until I got it pretty stable by 6am. Since 6am, it hasn't gone below 219 or above 234. I trust it enough to leave it completely unmonitored for 5 1/2 hours. {crosses fingers}

I think I might have found my new favorite wood for smoking. Normally I use oak, and occasionally pecan and mesquite. But I made some pulled pork this weekend, and used cherry. It was awesome. Not sure if it was just the wood, as I also used a new rub/marinade, but the smoke flavor was excellent.

Cherry is one of the best woods for smoking if I remember correctly, I am using cheap hickory right now. But I might end up buying a 6 lbs pork butt to cook this weekend. I don't know...

Bump for a question now that the weather is finally getting nice...living in an apartment with a balcony now, and the building rules are electric grills only. Looking around at neighbors, it seems a couple might have some small propane tanks like you would bring to a football tailgate. I could probably get away with one, but absent that, are electric grills any good these days? I guess I would get a piece of the grilling experience if I had one, but I get the sense that it wouldn't taste very good. But that could just be my own pre-conceived biases. Any insight or recommendations of good (reasonably priced) ones?

On the electric grills, it all depends on the quality of the infrared element. The better ones have nearly the same output as the infrared burners on gas grills.
