motivating your kitchen staff

26 years slaving over a flame and I'm sharing some insider info on the Culinary World.


Tips for managing and motivating your kitchen staff

1. Encourage, Teach- cheapest, can be time consuming and soul draining.

2. Drugs and Alcohol- can be very effective, especially with minors.

3. Threat of Violence- If you can master the LOOK then this is a "go to" skill.

4. Ridicule- Only works in first year or so. After that you're ridiculing your retention of said person.

5. Actual Violence- If there is any way to use this tool first you will have the most loyal employee ever. Trust me.

6. Pay Increase- Last resort. Ineffective. Creates expectations.

Except for the pay increase one. There are instances where a pay increase is effective in leading towards better sex.

I think if you can afford a pay increase, you should be looking for higher quality staff.

I started work in a family owned restaurant when I was 15. They swore at you, worked teenagers insane amounts of hours, zero benefits and almost impossible to get a raise.

I just assumed that's how all jobs would be for the next 50 years until I retired.....From you tips the industry hasn't changed much since 1978

3, 4, and 6 are particularly effective. One time we had this employee who felt she deserved a raise. Finally after about 6 weeks, we determined that .15/hour was the correct amount to offer.

Another good one is to give someone a 25 cent raise, and then cut them down 2-3 hours a week if possible. Net savings to the company.

I think you almost have to have a pimp type relationship with your workers. If they respect the back of the hand, they'll work better.

I bussed tables at 16, hated my job, the waitresses made sure if I kept their tables clean and open they would split tips, my boss started dumping hours on me, I took them...requested a weekend off a month in advance, they only did the schedule a week ahead...it got to the time off and it wasn't granted...I switched with another busser, the boss told me no...I told him to fuck off in front of the staff before opening and walked out...felt good cause he was an asshole and treated everyone horribly and went on my camping trip.
