I am new to 2k football so I am not sure, but I really like the option in madden where the coach picks the plays. Sometimes its easier for me to just pick that. Does this game have that option?

Not sure but it was in 2k5 so I assume that it would be in.

Yeah, if you watch the in-game videos you can see on the play screen a button that says "coaches pick'

not only that but from earlier interviews it's nearly impossible to tell if the AI or a human is doing the play calling.
