My offense is gonna center around Emmitt as well, so I'll probably have Moose and at least one legend offensive lineman. From there I'll get a least one bronze speed receiver (Alvin Harper, Raghib Ismail, or another depending on what abilities combination I like best), a quarterback with the Play Fake attribute, and a tight end who can catch the ball in traffic and be a safety value (though Moose also can serve this function since he has Soft Hands, so I may not get the TE). Basically, I'll run straight at 'em with Emmitt and use some playaction to mix it up.

Or I'll throw all that out the window and just design an offense centering around Andre Ware.

I don't have the list in front of me, but I'm thinking I can do ok with a bronze QB, maybe Steve Grogan or Jim Zorn. I will take a silver HB, and a silver WR.
I might take another WR in the bronze level, or I might go with two bronze tackles, gotta protect my QB from some of the pass rushing animals in this game.

This is one of the things that I really love about this game, there are really so many different ways you can go, trying to find the correct match ups for your online opponents should really give this game some legs.

Too bad Keyshawn Johnson isn't in the game since he retired. He'd be a nice possession WR to have.
